Good day, Can you tell me how to set-up the units for the GPS to read Eastings and Northings for waypoints especially the Position format and Map datum

I'm from Papua New Guinea in the Pacific region and use a metric system of meters

Have you tried going into Setup / System / Units / Position Format and choosing "UTM UPS"? I don't use Eastings and Northing but this setting looks like what you need.
