Is there any way or are there maps available that show Welcome Centers and/or rest areas on interstate highways? Would that be a POI? But then if I change destination then change POI?

You can load a POI file on to a NUVI or similar gps. You can get POI files from this site: http://www.poi-factory.com/node/1631 .

One of the most popular seems to be the rest areas on the Interstates. It is usually update about every couple of months.
